I heartily recommend [url=http://www.apress.com/book/bookDisplay.html?bID=10151]Beginning Hibernate: From Novice to Professional[/url], by Dave Minter. Not only is it an excellent introduction to Hibernate, the author posts on this forum frequently.

I saw his book in my local bookstore this morning. Had a bit of a chuckle, Dave would like to thank Jeff Verdegan for a particularly tricky example in chapter 13, apparently.....
Looks to be a pretty good book, too. Covers subjects such as stored procedures from Hibernate, which Hibernate in Action doesn't touch on at all (unless they're covered in the second edition, which is at least twice the size)
I'd recommend Dave's book, too, from what I've seen of it
