Chai is a Hindi word that means tea but often refers to a tea that has spices in it like cardamom. It is best when obtained from road-side stalls India. They make it in large brass pots for truck drivers and are served in cracked glasses that are cleaned with some ashes from the fire and rinsed in Salmonella-ladden brackish water.
